Specific learning objectives
The course allowed participants to improve their knowledge and/or practical skills on:

  • the new EU legislation on the protection of animals at the time of killing in slaughterhouses and OIE standards;
  • the basic procedures for monitoring, controlling and supporting the implementation of AW requirements and conditions in slaughterhouses, against EU legislative requirements;
  • the assessment of Animal Welfare risks at slaughterhouses;
  • the approach of Regulation (EC) No 1099/2009 with particular focus on how to assess standard operating and monitoring procedures (with the role of scientific support foreseen in the regulation) and the role of the animal welfare officer;
  • scientific basis for proper handling, stunning and killing of animals (animal behaviour and anatomy);
  • practical ways of assessing the impact of lairage facilities and handling of animal welfare;
  • main stunning and killing techniques applied in slaughterhouses in Europe (for each method: conditions of proper use, critical points to check, advantages and disadvantages, methodology to evaluate their effectiveness);
  • animal welfare outcomes: practical examples in slaughterhouses and how to monitor them.
